Delicious Roasted Tilapia Wrapped with Aluminum Foil


Tilapia is very common fish, especially in the Philippines, though it is not our national fish. It is very common, especially in Mindanao, where there are many rivers. The famous tilapia source in Southern Mindanao is Lake Sebu. There you can also find many fish pens. Tilapia, however, can also be caught in small ponds and rivers in the farm. I remembered when I was still small, I and my friends used to fish in rivers and lakes, and even in farm roads where water from the river passes going to the rice fields. At the end of the day, we would find ourselves carrying strings full of tilapia.
Tilapia is also one of my favorites because it is soft, delicious and most especially, cheaper than other fishes. It can be cooked in many ways. It can be fried, roasted or even souped! I have learned how to prepare tilapia in different ways, and this time, I want to share with you my delicious roasted tilapia wrapped with aluminum foil recipe.


Ingredients:
tilapia
tomatoes
garlic 
onions
lemon grass
salt

Procedure:
1. Remove the fins of the fish. If possible, use scissors.
2. Remove the scales.
3. Wash the fish. 
4. Cut an opening at the back, not on the belly. (The belly tastes more delicious when cooked. You can also put more ingredients inside.)
5. Remove the intestines and also the gills.
6. Wash the fish properly then drain it.
7. Sprinkle salt on the outside and inside of the fish.
8. Insert the lemon grass, sliced tomatoes, onions and garlic into the opening of the fish. 
9. Wrap the fish with aluminum foil. It would be better to put onion leaves (or whatever you prefer) so the fish won't stick on the foil.
10. Roast the fish under minimum heat. You can also use your gas stove.
11. Serve with desired sauce.
